Quick Chicken Curry

Remove meat from a 2 lb.rotisserie roasted chicken
1 cup water
1 cup white or brown rice. (coucous can be substituted for rice
2 T olive oil
1 medium onion– diced
2 cloves garlic minced
2 large carrots cut into small pieces
1 T curry powder
1 cup coconut milk
Salt and freshly ground pepper
3 green onion chopped
Cook rice according to directions and let sit until rest of recipe is complete

In large skillet heat oil over medium heat
Add onions, garlic and carrots
Sauté about 5 min or until onions and carrots are tender
Add curry powder —cook and stir for 3 minutes
Add chicken and coconut milk and bring to a simmer–stirring often
Season with salt and pepper
Transfer rice to a large bowl and fluff with fork
Spoon chicken curry over rice
Sprinkle a little green onion on top
